in Seafood
Hey Everyone,
As you may have gathered by now I really love seafood, if I lived by the coast I'd eat fish 7 days a week, but unfortunately its a bit harder to find fresh fish here in the midwest. My local fresh thyme market was having a sale on frozen Wild Mahi for $6.99/lb and I got 1.75 lbs. Dusted it lightly with sea salt, black pepper and a dash of oregano. Cooked it direct on a cedar plank at 350 for 20 minutes or so until it was firm and the fat had seeped out the sides of the fish. Right before I took it off, I drizzled some fresh butter over the top. The clams came stuffed, you can get them in 6 packs, but I just got two for an appetizer. Put them directly on the grid and they cooked in 10 minutes or so.
Enjoy!
