Spachcock Chicken & Vegetable Recipe

I am going to do my first cook on my new LBGE tonight and I was thinking about doing spachcock chicken with vegetables.

For the chicken I am thinking about doing 2 birds:  1 with a lemon, rosemary, garlic, salt, and pepper rub and the other with Kodiak River rub. I would put them on indirect at about 400 degrees with a chunk of Apple wood.  After about 10-15 minutes, my plan is to pour a mix of veggies (cut up some small red potatoes, onions, and bell peppers and mix them with a tiny bit of olive oil, salt, pepper, and rosemary) in the drip pan until all is done.

I haven't been able to find any great sounding recipes for chicken with veggies other than the Naked Whiz recipe.  Does anyone see anything wrong with the combinations I am thinking about trying tonight?  I appreciate the help!

    I cook spatchcocked turkey or chicken @ 400 Direct (no veg pan under as that's not direct). This is a raised cook. As you are asking for ideas I sent this. Lots cooks indirect with veg pan.

    @Monaarts‌, I'm a little late, but raised direct is the way to go. How did it turnout? Any pics?
