Flank Steak and Swiss

I did them again tonight with rave reviews and so I'm going to try and post it again but without mentioning the city I visited that gave me the idea for doing these. The subject is a sandwich and it goes something like this:[p]In a pan, saute green pepper pieces, onion hunks, mushes slices and tomato chunks. As it reduces down, deglaze with white wine. Reduce a bit, then add chicken stock. Reduce to a sauce-like consistency. Throw in a bunch of bread-and-butter pickle slices along with a few Tbl's of the juice. Cover, remove from heat.[p]On Mr.Egg, get a hot fire and throw on the flank steak...about 4-5 minutes per side until med-rare-ish. Pull off and let sit till nearly cool. Flip a few times if juices leak out. Slice about 1/8" thick across grain and add to saute pan of vegetables. [p]Mix it all up. Cut sandwich-size hunks of Baguette and slit lenghtwise. Stuff with meat and vegetable mixture and top with swiss cheese slice (or any other cheese preference; notice I did not say Cheez-Wiz because where I live, they shoot people for buying that stuff). [p]Wrap each sandwich in foil. This is important as it lets the baguette get a bit of moisture in it...my daughter and wife stressed the importance of this to me...they did not want a cheaper hoagie-style bun with this sandwich and insisted the baguette must be used. Pop the wrapped sandwiches in 300* oven (give or take a therm) for about 15-20 minutes.[p]Acid test results: My 11 yr-old daughter ate the onions, pepper and pickles with the rest of the sandwich!!![p]My message is simply this: It's a cheap piece of steak that tastes great and is not tough. And did I mention, it tastes great? From the recipe you can also gather that it "holds" well at a nukber of different stages...including after it is assembled.[p]When I first posted this recipe a couple months ago I was raped, pillaged and burned by some Right-Coaster Vigilantes who thought I was trying steal their daughters. I merely stated I was "inspired" by their local quisine to do what I did when I got back to the frozen tundra. So, I won't mention that city by name in this thread, and I won't say anything more about how the "real deal" uses Cheez-Wiz(Sheesh!), and I won't mention that my inspiration came from the town that boohed Santa Claus, but claims to love all their brothers. Speaking of brothers, we got the Ringlings here in the North, they got a great brew on the Right Coast made by a family that rhymes with our circus brethren.[p]Long thread, but damned good eats...try it![p]
