Caribou ribs

Recently cooked up some caribou ribs on BGE. These suckers are big even though the one we shot was only about a two year old. There isn't a lot of meat on these so I ended up cooking them in a foil tray with apple juice for 2-1/2 hours at 220. Took them out of the tray and added some of Woodmokey's Kona Koffee rub and then did about 1-1/2 hours at 200 indirect. After the indirect I added some Stubbs Sticky Sweet BBQ sauce for about 10 minutes at 350 then another couple minutes at 450.
They turned out way better than I thought. My wife doesn't like any game flavor and these had absolutely none of that at all. They were a few that ended up chewy but not bad at all.
Topped everything off with some morels we froze up this summer. Sauteed these in 1/2 cup of Merlot, 1/2 an onion then added some Penzey's garlic and 2 tbls butter. Didn't get pics of the Morels but will on the next go around.

Alaska Interior. Love it here. Here's a shot of our high camp looking out over the Fortymile country. Hundreds of miles of nothing but rivers, mountains, trees, moose, caribou and mosquitoes.
How about you? What part of Canada? Should try some moose ribs on the Egg but you better have an XXL to do so ;-)
