Caribou ribs

Recently cooked up some caribou ribs on BGE. These suckers are big even though the one we shot was only about a two year old. There isn't a lot of meat on these so I ended up cooking them in a foil tray with apple juice for 2-1/2 hours at 220. Took them out of the tray and added some of Woodmokey's Kona Koffee rub and then did about 1-1/2 hours at 200 indirect. After the indirect I added some Stubbs Sticky Sweet BBQ sauce for about 10 minutes at 350 then another couple minutes at 450.
They turned out way better than I thought. My wife doesn't like any game flavor and these had absolutely none of that at all. They were a few that ended up chewy but not bad at all.
Topped everything off with some morels we froze up this summer. Sauteed these in 1/2 cup of Merlot, 1/2 an onion then added some Penzey's garlic and 2 tbls butter. Didn't get pics of the Morels but will on the next go around.
