The official Federal Government guideline is that "The guidelines for freezer storage are for quality only. Frozen foods remain safe indefinitely."  I have found that vacuumed items last a loooong time.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.

Great info. I have been wondering this myself. I just got my vac sealer a few months ago.

I just ate some vac sealed chopped beef (brisket with sauce) that was in my freezer for 6 months. It tasted just as good as the day I froze it. I find that the fattier (sp?) meat like brisket and pulled pork keep very well when vac sealed.
Be careful, man! I've got a beverage here.
