Maple Pulled Beef

This is based on Clay's pulled beef recipe:  http://dizzypigbbq.com/portfolio/clays-pulled-beef-by-clay-roberts/ 

Getting ready for our annual golf tournament we decided that pulled beef must be on the menu.\

Started with two 4 pound chuck roast, seasoned with Bad Bryon's and covered with bacon.  Smoked until IT of 160 using Maple for smoke on a baking rack.

Removed and transferred on top of the bacon into a dutch oven, added 1/3 cup maple syrup,  covered and back on the egg until IT of 215.

Removed and pulled then back on the egg with about 1 cup of Stubbs for about another hour.

Turned out great!
