Low and Slow to Sear Temp

Cooked ABT'S for the fist time yesterday. 250 indirect for abut two hours. I transitioned to a low CI grate on a Spider and could not get the temp above 600. When I put the fajita steaks on the temp dipped to 500ish. I was hoping to get to 700 but no go. Of course, they were a smidge overcooked!

Reasons?

Check your air flow. Some of the bottom holes could have been clogged. The other could have been not enough lump to reach that temp.

  • Fuel or airflow probably. Did you have enough lump after the 2 hour cook? If so, you may have had airflow issues. I'd try cleaning it out and see if it takes care of it.

Tough day for the big ten yesterday!
