Stuffed Jalapeno's- my twist on poppers

I have been wanting to do these, so I found a recipe and changed it some, here it goes.
4oz cream cheese
4 oz can of Chicken of the Sea tiny shrimp
small bunch Cilantro
3 tbsp chipotle bread crumbs
Dash of Paul Prudhommes veg magic
Mix all together in bowl
Core and rinse 12 med size jalapeno's
stuff with filling
cooked raised indirect at 375F for 35 min
In retrospect I might cut down on the bread crumbs a little, the filling started to climb out of the peppers which leads me to believe the bread crumbs expanded and were the culprit? Any thoughts?
They were good with NO pepper heat left, perfect for my gringo taste! The shrimp and cheese/ cilantro shined through well. I stretched the bacon, no toothpicks necessary.
The pomegranates are from my backyard tree, they are dessert

Looks excellent. I've made these a couple of times and my cheese always rises out of the poppers. I don't use bread crumbs so it's not that. Anyone else have ideas?XL BGE, LG BGE, and a hunger to grill everything in sight!!!Joe- Strongsville, OH

The cheese filling will expand and the peppers will shrink as they cook. Just don't fill them all the way to the top.
Looks great! Just wait, jalapenos are very unpredictable, your next batch could be fiery hot.

Thanks @DMW. I also learned the inconsistency of peppers the last time I cooked them. The wife may never eat them again lol.XL BGE, LG BGE, and a hunger to grill everything in sight!!!Joe- Strongsville, OH
