My first spatchcock and a temp control question.

Cooked my first spatchcock last night. It turned out well. I went with a glaze instead of a rub, therefore every so often I had to open the egg and reapply the glaze. Would the opening of the egg to apply the glaze cause the temp to rise? I ask because the night before I cooked salmon and had no problems keeping the egg around 400 with the DFMT off and bottom vent slightly cracked. I did the exact same setup for the chicken and the temp went up to around 450, so I put the DFMT on and got the temp back down. My theory is the influx of oxygen from opening the egg causes the temp to spike up after I close it??

    That is the theory of how the egg works, yes you will see a temp rise when opening the lid due to oxygen increase. Keeping your settings on top and bottom usually settle temp back to where it was with little adjusting in my experience
