Wow a little Ale keeps you focused. OO with Apple wood at 225 for 6.5 hours for 6.5lbs. Foiled it for two hours with a little Au jus till 205. Into the cooler for 1.5 hrs and then slice. Moist and tender and the flavor was great. Thank you all the post, for your info lead me to my success the first time out yet again!! This egg thing is great. I once was lost, but now I'm egging.
