Turbo Spare Help

Options
Hi Guys,

Haven't been around for a while as it's been a busy summer.  We are going to be doing a cook for breast cancer awareness on the 13th and we only have four hours for the spare ribs.  Our competition spares take right at six hours.  I'm running out of time to do a bunch on test runs and thought one or more of you might have some hints to shave two hours of the cook.  Thanks in advance.

Mike

I do turbo spares all the time. What I have found is foiling my PS and keeping the dome at 330 works better than 350. Typically my St. Louis style spares are done in about 2 hr 20 min give or take 10 minutes and that includes saucing both sides at the end. HTH
