Which is a better source for Brisket?

I have a local butcher in Naperville, IL that processes their own meat. For Brisket they tend to have pretrimmed 8-11 lbs packer cuts.
Am I better off going through them since they process their own beef or thru a butcher that buys their brisket from a plant?

We too have a butcher that processing everything in house. The quality of meat I get from them is definitely a "cut" above the rest. I buy most everything from them.

I'm certainly no expert but one thing I would check is just how much they trim them. You want to leave some fat on the briskey. You might also ask for an untrimmed briskey at a lower price.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I buy all mine at Walmart and have never gotten a bad one.Only down side is going to Walmart.XL,L,SWinston-Salem, NC

@Hi54putty, we have Neighborhood Wal*Marts that carry the full packer here in Orlando, FL and shopping there is a little bit easier that going to the full blown Super Wal*Mart.LBGE & MiniOrlando, FL

They (Casey Foods) offer trimmed and untrimmed. For some reason they always question mw when I ask them to trim off the fat on the bottom of the brisket and just leave the fat cap on the top. They are more pricey, but the briskets are well marbled. My question is why they do not carry larger briskets, smaller cows perhaps?
