First up, welcome aboard and enjoy the journey.  I would suggest pulled beef or pepper stout beef (each use slow smoked chuckies).  check the search function here or google and add Big green egg to your query and you should get plenty of hits.

Smoked ham and swiss sliders on Hawaiian rolls. Still tastes good cold, easy to make a bunch, and people will rave over you're amazing ham abilities with a simple naked ham well smoked.

Rub some wings and smoke 'em!

Easy to reheat.  Will taste like no wings they've ever had.  And they're pretty hard to screw up...  :)
If you want them to go longer, either toss them in a very hot rub before cooking or a very spicy wing sauce after cooking.  YMMV

Im going to suggest smoked pork and beans--bbq style --smoke a butt, pull it and mix with baked beans, sauteed onions and bbq sauce in a dutch oven and throw it back on the egg for an hour--use a crock pot to keep warm at work

Just incase you might like to try them here's the recipe for the sliders and they are yummy. I made them with a smoked pork butt that was cooked to about 160-170 and sliced. Poppy seeds were not a favorite so we omitted them. Baked Ham and Cheese Party Sandwiches Servings: 24 "Mini rolls stuffed with deli ham and melted Swiss cheese are baked with a savory poppyseed-mustard sauce for an easy, tasty little bite or appetizer." INGREDIENTS: 3/4 cup melted butter 1 1/2 tablespoons Dijon mustard 1 1/2 teaspoons Worcestershire sauce 1 1/2 tablespoons poppy seeds 1 tablespoon dried minced onion 24 mini sandwich rolls - Hawaiian rolls 1 pound thinly sliced cooked deli ham 1 pound thinly sliced Swiss cheese DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. 2. In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls. 3. Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

    Someone suggested Chicken wings

or you could kick it up a notch and make Turkey Wings

Lots of people will make Lasagne, but how about Sausage & Spinach stuffed Canneloni?  You won't see that very often at Potlucks.

or a Fried rice, but make it with some smoked meat from the BGE.

Or Tacos made with smoked Carnitas, or enchiladas for that matter.

If i may suggest adding grilled pineapple.

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

A twist on pork butt is carnitas. I cut the butt into chunks and cook in a enamel cast iron pot with orange juice and other spices till fall apart, then take the lid off to reduce and brown. Lots of recipes on the web. A few packages of tortillas and some pico de gallo, done.
