@ henapple, I'm relatively new to eggin so forgive me if this is a dumb question. For all the comments I've seen about dome temp vs grate temp, why clip it on the dome probe?LBGE (still waitin' for my free T-Shirt), DIgiQ DX2 (In Blue, cause it's the fastest), Heavy Duty Kick Ash Basket, Mc Farland, WI.

@XC242 - These pit temp probes are only used on a low & slow cook. During a low & slow, the dome temp and the grid temp pretty much equalize after a little while so IMO it doesn't matter if the probe is clipped on the grid or the dome thermo. Where ever you feel comfortable having it. The important probe is the one measuring the meat temp.Flint, Michigan

The meat is right under the probe...bb. So in one aspect it is measuring the meat temp.

I don't know much but I'm starting to think if you do a low and slow @ 240 or above and the probe is out of the direct heat and not too close to the meat it's not all that critical where it gets attached. I have clipped the pit probe from the Stoker to the dome thermometer stem and to the grid making sure it was not getting radiant heat. On a L&S I really saw no difference. The temp sending unit in my oven is at the top. The thermo on my egg is at the top. Most egg recipes I see specify dome temp. So, I clip my digiq to the thermo probe. Don't know or care what the grid temp is... have never checked it in the 5 years I've owned an egg.
I hate it when I go to the kitchen for food and all I find are ingredients!

Seriously, never any problems. Dome temp and grid temp are usually within 5-10 degrees. Internal meat temp (for brisket) is where I focus.
The problem with a problem is that you don't know it's a problem until it's a problem, and that is a big problem.

@henapple I have 2 temp probes for my Stoker, One goes in the dome hole and 1 at grid.
Usually a 10-20 degree spread, but sometimes greater.
