how to keep sausage from sticking

I have a pile of deer sausage that was ground too fine for my liking so I decided to make some turtle eggs. They turned out really well and I am glad I now have a use for the sausage, but I had a extremely hard time making them. The meat sticks like glue to anything but itself. Any tips? maybe add breadcrumbs or something?

    Did you grind it?

    When I make meat sticks etc, when I put the cure in it acts a binder too making it super sticky.

    Try getting the meat colder. Basically almost frozen, but not rock solid.

    The best thing to do is keep your hands wet with plain ole cold water. Simple but it works.

    no I didn't grind it myself. We had a deer processed into sausage this winter. Its prob 50/50 deer/pork. I really don't like the sausage as they are way to fine and bland for my taste, almost like breakfast sausage, so I've been cutting the meat out of the casings and finding different ways to use it.

    I'll try keeping it cool and using some water and see what happens
