Butcher paper on Amazon

Folks,

I have been reading the merits of butcher paper over foil and wanted to give it a try on my brisket cook for this weekend. Just wanted to know if this one availble at amazon (http://www.amazon.com/gp/product/B004EHZ6WC/) is good enough. Thanks!

There was a post awhile back about where to buy the pink butcher paper Aaron Franklin uses. Google will probably work sure there's not too many pink butcher paper merchants.

I went and ordered a big roll from Webrestaurant store (http://www.webstaurantstore.com/24-x-700-white-butcher-paper-roll/43324TAR.html). The shipping was almost the price of the butcher paper. So now I have enough paper to last a lifetime of brisket/pork butt cooks.

I think Sam's sells some that folks have used with good results. I think @henapple got it there?

I went through the pros and cons of paper as we started carrying in it at Ceramic Grill Store.  I was told by those who make rolled paper to stay away from Kraft paper as it is made from recycled paper and not FDA approved. 

Also, wax paper is not recommended as it is not the best idea to throw heat at wax.  Wax paper prevents the paper from breathing.  Air movement through the paper fibers (breathing) is what you want. 

A 24" wide roll is better than an 18" wide roll.  With 24 wide you can lay briskets width length and have enough flap on the ends to fold over.  40# paper is preferred as it is strong enough to hold up and thin enough to breath best. 

900 foot rolls are heavy, bulky and without the proper tools a pain to deal with.  We use them everyday packing boxes.  Although paper lasts, it can absorb smells, dirt and such if left sitting around to long.  At CGS, we could get longer rolls but decided to stock 24"x 250' long rolls.  At 6 feet per brisket, double/triple wrapped, it will last 40 briskets.

I use it for prep on my stainless steel table. Get your pork butt, ribs or spatchcock ready...put it on the egg and wrap up the paper and toss. I use the waxed because it won't leak. I made a large "paper towel" roller for it. Love the stuff.
