Aren't oysters only in season in months that have an R in them? I guess we are pretty close to September though. Cool idea, I'll have to give this a shot. I wonder where I can get a bushel of oysters....1 large BGE, Spartanburg SC

Yes they are great on BGE, here is a variation.

We have a market that sells them all the time.our local restaurants severe them year around so I thought it would be OK.but I have always hear that too.

When I was in my teens a bunch of my buddy's would get together and cook a couple of bushels. Of course we didn't have an egg, but we had charcoal and a piece of tin.We would roast the oysters in the shell, open them with a flat head screwdriver, put them on a saltine cracker and add a few drops of Tabasco.Of course there were as many beers consumed as there were oysters! @johnkitchens Every year at the fraternity house we would have a huge oyster roast. Those were some of the best parties I've ever been too. I still eat my oysters with a dash of Tabasco on a saltine. This post makes me want to organize an oyster roast.1 large BGE, Spartanburg SC

The "R" guideline came into effect before refrigeration was as prevalent, as the "R" months (September - April) are generally cooler. Now that the oysters can be kept cold from the boat to retail, they are safe all the time, although they get a little milky in the warmer water.

Oysters are most certainly not on ice from boat to table. I've drank beer with many oystermen and have fished the waters they harvest from. They use tongs to rake the oysters off the bottom and dump them in the bottom of small boats. They are in the heat of the sun from harvest until they reach the fish camp. They are still good to eat though.Be careful, man! I've got a beverage here.
