Great idea to smoke the bacon for a side dish while the ribs are cooking.
Any road will take you there if you don't know where you're going.

@Cookbook_ChipI pulled the bacon at 2.5 hours. It was well smoked, crispy but not burnt and crumbled beautifully for the 3 Bean baked beans!New Albany, Ohio

Lesson learned - should have had a drip pan. I had flares and could not keep the temp.I pulled at 190 and FTP'd the ribs at the 5ish hour mark. My cheap thermometer registered a quick 190.New Albany, Ohio
