Heading into hour 23 of a butt cook! I've never had a butt go this long. The egg has been holding steady at 240 the whole time.

I cooked 5, 7lb butts on my large earlier this summer. Took them off between 21-23 hours. Best damn butts I have ever cooked. Ran about 250 dome the entire cook. Rockwood all the way.LBGE, Marietta, GA

did an 11lb pork butt this weekend, cooked for 11hrs at 250 got an internal of 190 deg. I didn't get the bark like I got on the last one. But through the night my temp dropped. Is it normal for temps to rise and drop during the cooking process?
