OT - Chicken Parmesean

Thunderstorms all day yesterday so no Egging, but I did scrounge enough leftover ingredients from Saturday night's Pizza fest to put together one of SWMBO's favorite meals.

Pounded chicken breasts until flat, then breaded with flour / eggwash / Italian seasoned panko. Browned each one in a cast iron skillet, then topped with provolone / fontina / mozzarella

Made a side of spaghetti, using leftover canned tomatoes as the base for a quick sauce. Sauteed onion / garlic / wine and let simmer with tomatos until it tightened up.

Had a helper last night on this cook, he thought his Italian sausage sammie that he made was the winner - he was quite proud of it
