    Anything with sodium nitrite - tender quick, pink salt, prague powder, curing salt, etc. Just a pinch will do.

    You don't need sodium nitrate (prague powder #2) as that is for long term curing where the nitrate breaks down to nitrite over time -kind of a time release.
