After bitching about the cost of steak yesterday, I went and did them tonight. On sale for $10 a pound, but pretty nice ribeyes.
It was just The Spouse and I. My cheap (actually not that cheap) camera does not do low light so well, so one of the lamp pics is blurry, but you should get the idea. We love oil lamps and burn them all the time.
Steaks were fantastic. The Spouse says caveman is for bachelor nights, so these were done at 500 on a raised grid. As tender as you could wish in the most expensive steak house. Neither of us managed even quite half, so it is steak and eggs tomorrow.

Does this pass muster?
These were among the best steaks I've had, even refried.

Beautiful, Doc!
Did you do a reverse sear type of cook, or sear and flip?
Hungry minds want to know!

Sorry, I didn't make that clear.
I meant the original cook.
Thanks, I normally hot-tub, but I'll give that a shot tonight.

We started buying one Porterhouse and she gets the filet side and I get the strip side. I cook somewhere between where I want it and where she wants it. Even on sale steaks are not cheap enough to throw away leftovers.
She saves any leftover for a tender stew.
