OT: Vietnamese Spring Rolls

It's hot...damn hot. So decided to make this recipe for a nice refreshing lunch.

Dipping sauce was awesome and the spring rolls hit the spot. My wrapping wasn't perfect, but not bad for my first time handling rice paper.

On deck for dinner will be some hatch Chile crab cakes followed by firing up the egg for some rainbow trout.

I love these but they are tricky to roll.

I do eat a lot more spring rolls, sushi, and (especially right now) local tomatoes during the summer.  Those look excellent!
