Veal Rib Chops..........recommendations...

Picked up some nice looking Veal chops. Looking for some recommendations on fixing tomorrow night. Thanks in advance.

    WVU-EGG,[p]Veal chops are my favorite. I would keep it simple. Brush with butter, salt and lots of cracked pepper. Cook direct at about 450-500. Time depends on thickness but I like to go for something between medium rare and medium for veal. [p]While they're cooking, pour a couple of tbsp of olive oil on a platter. Add a healthy mix of coarsely chopped fresh herbs (rosemary, oregano, basil, more salt and pepper) to the platter. Remove the chops to the platter to rest. The idea is to wilt the herbs a little and mix the meat juices with the oil. After they've rested, serve with the herb/oil mixture.[p]Serve with a good red wine.[p]Now I'm hungry...(and thirsty)![p]Paul
