Batch is completed now. I smoked it last weekend but did not have time to post it due to a last minute business trip. I had 2 X 5 pounds bellies and I used brown sugar instead of maple sugar for one of them. Lesson learned: No real taste difference between the two, I'll use brown sugar from now on, it is much cheaper. If I want maple taste, I'll just use maple sugar or syrup when cooking it....
