3rd cook today, not your usual pancakes and sausage

This morning it was a breakfast casserole and smoking a slab of shoulder bacon (also posted with pics).  Tonight was smoked sausage along with Zucchini pancakes cooked on my steel "flat top".  The pancakes are one of my favorite things to do with Zucchini- kind of like potato pancakes.  I served them with sour cream - deelish.

    You have the egg in overtime mode. It looks good. Not a zucchini fan, but it does look good.

    The recipe is one I adapted a few years ago from a potato pancake recipe.  Had to find ways to use all the zucchini.   I really like them with sour cream, usually serve with kielbasa or something similar. Here it is:

    2C Grated zucchini
    1/4 C Grated onion
    2 Diced garlic cloves
    1 Egg
    2T Milk
    1C Baking Mix (Bisquick or similar)
    Salt and pepper to taste

    Mix all ingredients
    Cook spoonfuls on oiled griddle turning once
    Serve with sour cream or applesauce
