Picked up 2 St. Louis style racks from Publix and coated them with yellow mustard and a home made rub. Intending to cook them 5 hours at 250 with some apple wood, 2 hours on the grill, 2hours foiled then an hour back out of the foil coated with some Stubbs BBQ Sauce. Well the dome temp kind of got away from me the first couple hours and i was around 300, still learning. So i cut the cook short around 4 hours,still turned out pretty good, but they could have been better.
