Balintine chicken (with pics)

Its been a wile since I deboned a chicken so I thought I should give it a go .
I stuffed the deboned chicken with blue cheese , sauteed onions and green peppers and jalapenos and put in some homemade bacon and rubbed it down with Coffee Rub .
Cooked at about 425 and i put in some cherry wood just because I could .
It was delicious and the Blue Cheese was a great idea
The finished product wasnt as pretty as I had wanted as I ran out of butchers twine and I did not make it tight enough . That said it was tasty as all anything
