Our local Stauffers market ad this week said they had Top Sirloin Cap on sale at $8.99/pound. For those who have been following this forum for a while might recognize this as Picanha - a great Brazilian steak served at churrascaria restaurants like Fogo de Chao or Texas De Brazil.
I was very surprised to see this even mentioned in an ad so I went right down to get some. The ones in the case had been trimmed to remove the fat cap, but you could talk to the meat cutters and they would cut some with the cap left on if you wished. I was told they usually have this cut in the back and use it for shish ke babs, etc.
I had a long chat with the assistant meat manager and asked about another cut I had been looking for - Chuck Eye. This is the next rib over from a rib eye and is supposed to be almost as good. He showed me that they also carry this cut but call it Chuck Delmonico. It was $8.99/pound - regular price. I didn't buy any of this cut this time.
This market also regularly carries Tri Tip and Shoulder Tenders.
Their garden center is a Big Green Egg dealer but I'm not sure this has had any influence on the meat they carry.

That pincanha is phenomenal! Did you get some and how did you cook it to mimic the fogo-style?
