Not quite sure. Only thing I can think of is the opening and closing to deal with ribs slowed me down. Put on at 9am...now 10pm. 5lbs pork butt @225 until recently bumping to 270.

Thermal dynamics can be a ****. The butt moisture could've effected it but, I seriously doubt it. Sounds like something to contemplate over another cold one.
