Brisket Question

Hard time finding brisket lately. When I do they tend to be large (11-15 lbs) and pricey. $50-$75 range. That size is too much to cook all once. Wondering if anyone buys, then cuts in half and if so I need suggestions on best way? Don't mind leftovers, but do mind the bride bitching about same food over several days.

    Cook it whole. Portion, vac seal, and freeze leftovers.

    Great suggestion. My problem is I want to cook it, enjoy it when finished...........then start thinking about next cook. Also, leftovers don't go over well with the bride and kids.

    Yeah, I know what you mean. Leftover brisket is a good base for chili, stew, etc. I've done that a few times, pulled frozen leftover brisket out and use it for chili or Guinness stew, etc.

    And my freezer is full of cooked proteins... I should stop cooking for a week or so and just heat up stuff from the freezer.
