I bought two mango's!  I am doing it again tonight with some pork chops.  I will be doing this a lot.  Very light, fresh, and tasty.   Did you add a jalapeno to yours?

I did. Cut very finely. I'm impressed with how flavorful it is without any fats (oil or the like). Even my 2 year old likes it.

Me too.  I went back to look to make sure no oil was necessary.  I did add a little kosher salt and pepper. 

Unfortunately I am the only one that will eat it.  My wife is pretty plain with food.  Hopefully my four month old does not turn out like that.

@travisstrick put a spin on this recipe this past Saturday.  Added some leftover Jasmine rice to the mix and I did add a simple vinaigrette (EVOO, lemon, salt, pepper) to add flavor to the rice.  Thought you would be interested.

That looks really good. I'm planning on doing it agian (for the 3rd time) soon.
