Thanks for sharing that. Heard of all them Central Texas ones. Never seen anybody really talk about South Texas BBQ before. I'll definitely hit up Hoegemeyer's in September when we go back to our hometown to visit family. Hadn't heard of it before.

  • I live in Austin and I do know that Franklin BBQ is supposed to be fabulous, but they only serve lunch and you have to stand in line for HOURS and when they run out of  food...and they do every day...they are done!  So I do not care to stand in line and therefore have not had the good fortune to try it.  HOWEVER, we eat at the Salt Lick all the time and especially when company comes to town...everybody loves that place.  Our good friends from Canada came to town and they brought back the BBQ sauce and now they can't get it anymore since they are across the border.  Next time we will load them up! There are other good ones on the list..some put too much salt on their meat, but you can't go wrong with BBQ in Austin ;;)

Salt Lick. Great atmosphere. Mediocore BBQ at best. I've sent back the brisket before as it was crap. Here's a quote that makes you wonder:

"These pits are certainly beautiful and provide a great spectacle at the entrances. Sauce is mopped onto mounds of meat while the fat drips and sizzles on the fire below. The resulting live oak smoke creates a fragrant dining area and whets the appetite, but what's back in those huge kitchens not open for public view?

I hung back at the stacks of live oak waiting for someone to come grab a few sticks. Before long an amicable pit man came out and I asked about the pits in the kitchen. Without a hint of shame he said there were six gas-fired (presumably Southern Pride or Ole Hickory) smokers where they smoke the meat overnight. The meat is then refrigerated and basically reheated for about three hours on the direct heat pits on display."

    Hmmmm. :-?

Maybe it depends on where you want to wait in line.  Sitting under the oaks listening to music, drinking from your own cooler...waiting for either lunch or dinner.  Or, in a parking lot, in an actual line, middle of the day.  For example, I hear lots of people refer to Franklin's as a bucket list kind of place, not somewhere you would consider regularly or as a relaxing destination.  Salt Lick can be very good, when it's off, it's never too far off.  Personally I don't care how they cook it, but it's a destination, it's the atmosphere and those big open pits are part of the atmosphere they are selling.  I think their pickles are fantastic and the turkey is some of the best smoked turkey I've had.  Brisket is almost always very good, especially since they started selling moist or lean and burnt ends instead of one-size fits all.  When you can, don't order plates, order a la cart by the pound and you can continue to order more during your meal - even 1/4 lb at a time.  With 4 or more people this always cheaper.
THANK YOU FOR YOUR ATTENTION TO THIS MATTER

They have a heck of a lot of business for mediocre BBQ.

Until you've had Franklin, La BBQ, John Mueller, Micklethwait, Stiles switch or Louis Mueller...you really have no idea how bad Salt Lick is.

They cook all their briskets on gas rotisseries, sauce them during the cook, then pull them off when they're about 80% done and throw them in the fridge. The next morning, the warm up everything on their open pit.

I'm sorry, that's not any BBQ that I want to eat. It's a great atmosphere, but it ends after that. Their BB ribs on Saturday are the best thing they serve.

anyone that mentions Salt Lick as great BBQ loses a lot of credibility. It's a great atmosphere type of place (the driftwood location) but other than that it doesn't hold Franklin's, JMMC, etc jock.
