i am leaning towards roasted apple, goat cheese and walnuts , but would be happy for some ideas from this creative and resourceful bunch ?

That sounds like a good start. I've done something similar plus fresh spinach.---------------------------------------------------------------------------------Well, "spa-Peggy" is kind of like spaghetti. @pantsypants make sure you precook the bacon a little first. I usually put the weave in the egg for about 20 minutes indirect at 350 prior to wrapping the tenderloin. That helps the bacon thats double wrapped get a better texture.

it never happened . I ended up burning some beef ribs instead .
I will do the tenderloins during the week .

I have two go-tos. Cuban: stuffed with ham, swiss cheese, and dill pickles. Second one doesn't have a name but is a mix of wild rice, Italian sausage, dried cherries, and almonds.
If I had to pick I'd do the second, its awesome. -
