Need help for charity event

My awesome brother in law is trying to help a family in need and would like your expert help.

Say...would you please post on the Egg forum about how much pork to cook for 750 people. The pork will be made into sandwiches using standard size hamburger buns. I'm planning on cooking 4 cases each weighing about 80#. I would just like a second opinion. :)

    1/2lb per person max - you will probably have leftovers.

    If everything is sandwiches, 1/3lb per person is probably safe.

    I think 320lbs is probably a good amount.

    Doing some simple math - if there's 25% shrinkage/waste you will end up with 5.12 ounces/person - just about 1/3 lb.

  • First, it's awesome that you'd undertake such a huge task.  I think you'd be OK if there are plenty of sides and if you limit to 1/3 lb. per Sammy.  Unless it's all guys with a big appetite, then you'd be cutting it too close in my opinion.

    I've only done about 6 bone in boston butts, but I see about 50% net profit. Anyone else?
