Piri-piri Wings

My best friend came up for a conference in Frisco and stayed with us the last few days. I was a bit worried and didn't know what to serve him, as they are kind of foodies, too and his wife runs one of those home food delivery services where she'll cook you up to 5 meals a week and deliver it. I'm always seeing their posts on FB and the stuff looks damn tasty. I was throwing out ideas to Mrs. G and one was wings. She suggested piri-piri chicken wings. Probably because its her favorite.

Got the wings in a marinade of piri-piri sauce, garlic, ginger, onion, cilantro and lemon juice Sunday night

Then I F'ed up and totally forgot to take pictures yesterday as they were cooking. I did manage to get a picture of a beer.

Finished pic of the wings with a glaze made of butter, piri-piri sauce, garlic, cilantro and and lemon drizzled on top.

Not only did I forget pics, but my stupid ass forgot to toss my home made jalapeno cheese venison sausage on the Egg that I had thawed out. I remembered as we sat down to eat and quickly threw some on. Didn't take long to heat up since it was pre-smoked. Anyway, the meal came out good and he was impressed by the wings (or said he was). The three of us polished off close to 3 lbs of wings, the sausage and fries. No tater tots were consumed to my disappointment. The wife said I couldn't make 'em :(

More importantly, I got to hang out with my friend of 35 years and catch up. With three kids of his own and another one coming, its been too long since we've had that opportunity. And I think he enjoyed being able to relax and drink a few cold ones with out screaming kids for a few days.

    Very nice cook, Griffin. I love Piri Piri but have never made it myself. So you started with a sauce base and added the other ingredients?

    I have never had Piri Piri, but they look delicious. Hanging out with an old friend is nice.

    @Cymbaline65 Yes, I started with Nando's Piri-piri sauce (I use hot, but there is a mild or medium) and then added other stuff

    For the Marinade (toss all in a food processer and blend)

    •4.7 oz bottle of Nando’s piri-piri sauce

    •6 cloves of garlic

    •1 small onion, peeled and quartered

    •3″ piece of ginger, peeled and roughly chopped

    •1/4 cup chopped cilantro

    •1/4 cup canola oil or vegetable oil

    •1/4 cup fresh lemon juice +zest of one lemon

    •2 tsp coarse salt

    •1 tsp freshly ground black pepper

    •3 lbs chicken wings

     

    For the Glaze

    •1/2 stick unsalted butter

    •3 Tbsp chopped fresh cilantro

    •2 cloves of garlic, minced

    •3 Tbsp Nanado’s piri-piri sauce

    •2 Tbsp fresh lemon juice + zest of one lemon

    Melt butter, add cilantro and garlic and cook over medium high about 2 minutes till aromatic, don't brown garlic, add remaining ingredients and simmer 2-3 more minutes.

    Good gravy. Those look fabulous. I have a piri piri rub that's pretty good, sauced wings can only be better.

    Griffin, are those the only flavors you can get? I have a Nando's right up the block from the office so I can anything they sell. I can drink that stuff it is so good. The Extra Extra hot and Garlic are my favorites. Lemon and Herb is nice too. I might grab some for this weekend, thanks for the inspiration.

    I have no idea @Eggcelsior Those are the only flavors I've looked for at the store and only some stores carry it. They are generally located right near Tabasco, Franks, Cholula, Tiger's Blood etc. Never thought to look anywhere else or online for them.

    My girls would look at me really funny if I served up Tots. They are too spoiled on Fingerlings and Yukon Golds with butter and garlic, LOTS of garlic. ;-)

    One thing that I forgot to do that I like to do with wings when I marinate them is to pierce them a few times with a knife to let some of the marinade soak in. Never done a side by side comparison, but seems to work a bit.
