Long cook without any type of controller?

As others have said, it is not needed but it sure is convenient to have.  I have the I-Que 110 which is less than $150 and it does a great job.

Kidding, I haven't done the long low slow overnight type deal but would like to try it on my own first (because I'm stubborn) and then evaluate getting an expensive device.
