Upside down chicken... When & when not...

When smoking whole chickens on the vertical roaster, I normally put the chicken on the roaster head first (requires removing a bit of neckbone with shears) so that the thighs are higher, therefore hotter, than the breast. (Credit Little Steven). I also like to do chicken "raised direct"... no stone... to get crispy skin. Yesterday, I did both... Big mistake. Without the stone, and the breast closer to the coals, the breast was ready long before the thighs had reached 170°
DUH... Today I ride the short bus to school.
