Rib eyes: Reverse sear, Caveman or ???

I going to do some rib eyes - prime about 1.25" thick. I wanted to try caveman style but I don't know if the meat is thick enough to stand up to the coals.
Any suggestions on the best way to cook them?

My preferred method is to hot tub and then a quick sear.
