How long should a 2.5 lb pork but rest?
I am in progress on cooking my first pork butt. I went small, boneless 2.5 lbs. cooking at about 250. I plan to remove it from the grill when the internal temp is about 190. I do have a couple questions:
1. Given how small, how long should it rest? Does it need to rest for a full hour?
2. When resting do I need to wrap it and put it in a cooler, or can I just wrap it in foil and let it sit at room temperature?
Any advice would be greatly appreciated!
