Crustless Spinach Quiche

Just a midday brunch for the hubby and I. He seemed to enjoy it. He half the quiche :-). This was made in our oven but, it could be done in the egg too at 350℉ for roughly 45-50 minutes.

That looks delicious!

Stayed up late last night, friends over for dinner, then neighbor for late night manbearcave drinking and smoking, passed out on the couch and got up early to take some friends to the airport, then back to sleep, then work called with a database problem on a server upgrade, then watermelon and pot-sticker lunch.  Only 15 calories per pot sticker, but I think I ate about 30 of them.

Growing up my mom would make us spinach in scrambled eggs all the time. Most kids would probably hate it. But it was one of our favorites.

@texaswig‌ hubby isn't fond of spinach but, he enjoyed it also. It wasn't an overpowering flavor. I think I could've baked it a bit longer. But, he said it was good. :-). Thanks
