Bone In Pork Loin

Digging through the freezer last night in search of a pork butt, (I thought I had in there and was wanting to try Turbo) I found a 7lb Bone in Pork Loin.  Asked SWMBO where it came from.  Apparently there was a pork sale at Safeway a while back, and they were .79/lb.  She picked up 3 that were already cut into chops, and two that were whole.  Didn't bother to tell me they were in there.

So after not finding the shoulder I was looking for (still need to check freezer #3) I dug out one of the loins this morning and have planned to do it on Sunday.  Any suggestions or ideas what to do with it?  Was thinking about a brine.   SWMBO's suggestion was "just do it like your pulled pork".  UMMMM...No!
