Citrus and Savory Boneless, Skinless, Chicken Thighs:

This is a nice quick little marinade with a lot of flavor. I use organic mango lemonade, a sliced orange, a sliced lime, and a liberal amount of McKormic Garlic Herb blend along with about 3 healthy pinches of kosher salt. Just add the ingredients to the zip lock bag holding the chicken thighs and refrigerate for 2 to 4 hours. Grill direct with a hot and cooler spot on your grate. Use the hot potato, flip flop, technique. Plan to complete the cook later this evening, with pics to follow.

    Here are the pics from the cook. Remember, I live in Prescott Az, and my county is under strict stage 2 fire restrictions. I can't use anything that produces an ash, so my egg is covered and in the corner. The old trusty and legal Weber Genesis made dinner tonight. What ya gonna do, you have to eat. The chicken was amazing, nice and  moist, and super flavorful. I recommend that marinade highly, as it really brings out the flavor and works well with the chicken. I plated the chicken with a simple salad of Hass avocado, grape and sunburst tomatoes, shaved red onion, pistachio nuts, and feta cheese with a balsamic vinegar and olive oil dressing. The wife and I are walking 7 miles a day and trying to eat lighter, so desert was some sliced Fuji apples, shaved Mancheco cheese, and a few drops of fig preserves. All in all, a really flavorful little dinner for two. Even if it was cooked on a gasser.

  • Yesterday was June 30th. The day last year, that our 19 hot shots died fighting the Yarnell fire just 30 or so minutes down the hill from me. They rang the Court House bell 19 times at 4:41. My wife and I went down to pay our respects and honor those brave young men. Prescott is beautiful, but fire is a serious risk here.

    My buddy has a place in Prescott and down the hill in Scottsdale. His wife just got diagnosed with cancer so they (therefore I) haven't been this year. They're in Baltimore so I go there instead.

    I will add your buddy and his wife to my prayers. God knows their names. Puts a totally different perspective on life when we realize we are surrounded by the suffering of others. Still got to eat, so thank God for Q, and carry on.
