Brisket internal temp

Hey, I was wondering what internal meat temperature folks typically cook brisket? I usually cook mine at 200 degrees cooking temp to a meat temp of about 190. Thanks for any feedback.

I cook at 250 degrees, and go until 195-205 and until the probe slides in effortlessly.
I don't cook at 200 because 250 is much easier for me to hold. -
I don't probe it until it hits 200. Most of the time it's done by 205.Dave - Austin, TX

I try to have dome between I try to keep dome around 275 to 300 and usually go for internal between 205 to 210, works great for me every time...I shoot for dome at 275 to 300 and internal temp of 205 to 210, works great for me every time...BrianFairview, Texas

I try to keep it around 250 to 275 and shoot for an internal temp of 195 to 205. I too find it hard to keep the Egg at 200 to 225. I may do one this weekend and will let you know the outcome.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

I've been happy with 195 internal temp before rest. I imagine after I pull it it keeps rising to 200-205.
