Brisket internal temp

Hey, I was wondering what internal meat temperature folks typically cook brisket? I usually cook mine at 200 degrees cooking temp to a meat temp of about 190. Thanks for any feedback.

    I cook at 250 degrees, and go until 195-205 and until the probe slides in effortlessly.

    I don't cook at 200 because 250 is much easier for me to hold.

    I don't probe it until it hits 200. Most of the time it's done by 205.

    I try to have dome between I try to keep dome around 275 to 300 and usually go for internal between 205 to 210, works great for me every time...

    I try to keep it around 250 to 275 and shoot for an internal temp of 195 to 205. I too find it hard to keep the Egg at 200 to 225. I may do one this weekend and will let you know the outcome.

    I've been happy with 195 internal temp before rest. I imagine after I pull it it keeps rising to 200-205.
