Anniversary Lambsicles

My wife and I celebrated our anniversary yesterday in a pretty low key fashion, simple dinner at home (we had gone to Volt Saturday night to really celebrate). I had found a good deal on a frenched rack of lamb, so I marinated that in olive oil, fresh garlic, rosemary, and oregano, and salt and pepper in the morning before going to the office.

When I got home, opened some wine and got the egg going.

I did a reverse sear, starting the rack at about 330, until they hit around 125 IT, then let the egg open up to around 425 and pulled the indirect piece.

They got a touch more charred than I wanted, but I pulled at 142, and rested on a board, before cutting between each bone.

Served with garlic buttered noodles (after the plated photo noodles also got a dusting of freshly grated parm and chopped flat leaf parsley) and roasted broccoli.
