@nolaegghead inspired Cast Iron Chicken

So after seeing this recipe/pics I knew i needed to try this .
Couldn't recommend this enough . I dried the chicken out in the fridge for a couple hours , pre-heat the CI fro 45 mins @ 500 and splayed the legs of the chicken and then dropped the lil bastard in the CI .
After about 15 minutes or so I added onions , garlic leeks and Shallots . Pulled at 150 ( breast ) and let sit for 10 minutes while I took the drippings and added some wine , added some chicken stock and corn startch to make a bit of an au jus ......
It was great !
