Chicken Ballotine part deux

My FD gift to myself was a Ballotine stuffed with Prosciutto, spinach, mozzarella, Parmesan and fresh herbs. Following Jacques Pepin's video, my second go around deboning a whole chicken went from 45 minutes to 20 minutes. 1hr 15 minutes at 375, indirect, apple wood, Dizzy Pig poultry rub. Beautimus.

    Thanks for the compliments,everyone. Deboning a whole chicken just takes practice - but it's not that hard. SWMBO wants me to do another when we have guests over.

    Forgot to mention that those are not mashed potatoes, it's pureed Cauliflower - a much healthier alternative.
