Simple Green Lightening Shrimp with Mango/Peach Salsa

Decided to do a tried and true but awesome recipe posted here several times. Started out this morning making the Mango/Peach salsa so it could get all happy before supper and went ahead and made up the cilantro,jalapeño marinade for the shrimp. Only used the juice from 1 lime as to not cook the shrimp in the lime juice. Soaked the shrimp for 1hr and then onto the small at 450 raised direct for about 3 minutes per side image Plated with the salsa and blue chips image I decided to try some rum marinated pineapples with pineapple head. Whoa boy is all I can say!! I must has let them soak to long because it was like taking a shot from the rum bottle. Next time I will do 30mins or less instead of 1hr. Lessened learned, these things were like Rum hooch but too early in the evening. image
