Spiral rib rack update ( 4 pics about 200K each)

I'd hoped to try out the sprial rib rack at TXfest, but no luck. So over the weekend we invited the neighbors over and that gave me a chance to try it out. Six racks of b-back ribs are a lot of ribs. I posted the rack specs. earlier.[p]sprialsetup.jpg[p]The set up is simple, 2 wire brackets, 3 inches deep, holding the pizza stone down in the fire ring. On the stone is a pan for juices. I added apple juice. The rib rack just sits on top of the fire ring.[p]spiralsetter.jpg[p]I sprayed the rib rack with pam and used four toothpicks to keep the ends of the outer ribs from falling outward. I pulled the toothpicks out after about one hour when the ribs firmed up. So often, I gave the ribs a tug, just to make sure they did not stick to the spindles. This pic is mid way through the first 3 hours, unfoiled. [p]spiralcook.jpg[p]I must admit early on I was skeptical if this thing was going to work . I thought in order to get the ribs out, I would need to tear them out or they would be all curled up and ugly looking. Well to my surprise here is the most inner two racks, when foiling.[p]spiralwrap.jpg

The spiral held the six racks nicely. If I packed them tightly, I could maybe have gotten one or two more racks. Also, if required, I am sure there is way to use the rib rack as a setter to add one more level. I unscrewed it an put it in the dishwasher for clean up. It's a keeper. Tom

    that looks great. Did you run with the one I saw in Austin or did you make the "spikes" longer? Tough to tell from the pix. When will you begin production? Can you autograph mine??? Heee. Nice lookin ribs Tom! Joe
