Reverse Sear Cook Time

If I plan to get to 10 degrees shy of my target temp, how long will it take to cook a large low and slow steak?  I figured everyone is cooking at 250, but what is the average cook time?  Just trying to plan cook times.

    It is difficult to estimate a time due to the size and shape of the meat.  You can sometimes find estimates for time per lb but this is just a guideline. 

    I usually reverse sear using ribeyes or ny strips that are about an 1 1/4 inches.  I do the roast portion at about 275-300 and I estimate 15-20 minutes to get to 125.  


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    I go for the same amount of time as Smokey with 1.5-2 inch steaks. Probably closer to 20.
